Cashew Cacao Avocado Mousse

Ingredients
  

  • 2 avocados, pitted and flesh scooped
  • 1/2 cup almond milk - I like @malkorganics
  • 1/2 cup cashews (soaked in boiling water for 20 minutes- then drained)
  • 1 tsp vanilla extract
  • 1 cup raw cacao powder
  • 2 oz bittersweet chocolate, melted (I like @Theochocolate)
  • 2 tbsp maple syrup
  • 1 pinch of sea salt ~1/4 tsp

Instructions
 

  • Blend all ingredients together until smooth and creamy.
  • Top with cacao nibs, Siete or simple mills crunchy cookies, coconut, sea salt and roasted cashews... any toppings of choice will go!
