Detox Salad Dressing

You have to try this dressing—especially if you’ve been trying to eat more greens but can’t quite get excited about them. This is one of my absolute favorites to prep at the start of the week and keep in the fridge for quick salads or drizzling over a nourish bowl. I promise, it makes a huge difference!

I get it—bitter greens like endive, radicchio, and shredded brussels sprouts aren’t everyone’s go-to. But here’s the thing: the bitterness actually packs some incredible benefits. It activates your salivary glands and stimulates your liver, boosting digestion and detoxification while supporting healthy fat metabolism. I focus on nourishing the liver, gallbladder, and digestive systems in my clients with SIBO, IBS, PCOS, period issues, or those trying to conceive because these organs play a key role in hormone balance, daily detox, and digestion. Sometimes, they just need a little extra support to function at their best.

If you’re not loving the bitterness, no worries! Pair them with sweeter greens like butter lettuce or romaine, or top them with this dressing—it’s a game changer! You can even balance the flavor with sweet ingredients like pomegranate seeds or tart cherries.

This is one of my absolute favorites to prep at the start of the week and keep in the fridge for quick salads or drizzling over a nourish bowl. It’s the kind of simple habit that makes a big difference. When this dressing is ready to go, I find myself naturally reaching for more leafy, bitter greens—and actually enjoying them.

Bitter greens are powerful detox allies.

While they might not be everyone’s go-to, bitter greens like radicchio, endive, and Brussels sprouts are actually digestive superheroes. Their bitterness stimulates bile flow, which helps break down fats and supports liver detox pathways. Pairing them with a healthy fat like olive oil not only makes them more palatable—it also helps your body absorb fat-soluble nutrients like vitamin K and antioxidants.

Extra virgin olive oil is rich in polyphenols and monounsaturated fats, both of which support hormone health and reduce inflammation. Raw apple cider vinegar brings in gut-loving acetic acid and enzymes that can help support healthy blood sugar levels and digestion. Together, they create a balanced dressing that doesn’t just taste good—it works behind the scenes to support your health.

When a homemade dressing like this is already in your fridge, it’s so much easier to throw together a nourishing meal—especially one that includes bitter greens you might otherwise avoid. Ingredients
  

  • 3/4 Cup Olive Oil
  • 1/2 Cup Braggs Raw Apple Cider Vinegar
  • 1 Large Garlic Clove
  • 1/2 tsp Sea Salt
  • 1/4 tsp Fresh Black Pepper

Instructions
 

  • Blend all ingredients until combined.
  • Make sure to store in the refrigerator after making. It can be stored in the refrigerator for up to one week.
