Gluten-Free Vanilla Macaroon Collagen Cookies

If you have PCOS or have been working on practicing better blood sugar balance, you may sometimes feel like you need to cut out sweets, treats and carbohydrates from your diet. But when we restrict sugar and carbohydrates from our diet, our cravings kick into high gear and we often can’t last long before we start to feel out of control around our favorite foods.

Instead of leaning into a restrictive mindset to manage your PCOS symptoms and blood sugar balance, we want to adapt a mindset of abundance. Instead of focusing on what you can’t have, instead shift your energy to considering what you can add to your favorite foods.

These vanilla macaroons are the perfect example of how we can add additional components to our favorite foods to make them more balanced. These cookies include collagen, which provide a boost of protein. Protein is the most satiating macronutrient, and can help slow down our absorption of carbohydrates, meaning better blood sugar balance. Plus, this recipe is gluten-free, so if you’re sensitive to gluten, these cookies are for you.

Gluten-Free Vanilla Macaroon Collagen Cookies

Ingredients
  

  • 1 cup dessicated coconut
  • 1 cup almond flour
  • 3 tbsp coconut oil melted
  • 2 tbsp water
  • 2 scoops Vital Proteins vanilla collagen peptides
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions
 

  • Combine all ingredients together. 
  • Use a 1 oz baking scoop to portion out.
  • Bake in the oven at 325F for 15-20 minutes or until golden and cruncy on the outside and chewy on the inside
