Ingredients
Salad
- 5 oz baby arugula
- 1/2 head radicchio Sliced
- 1 pint cherry tomatoes
- 1/2 container strawberries Sliced
- 1 container marcona almonds OR 1/2 cup of salted roasted pistachios
- 1 block goat or feta cheese I used 5-6 oz of Kourellas
- 1 avocado sliced
Dessing
- 1/4 cup lemon juice
- 1 tbsp zest from large lemon
- 1/3 cup olive oil
- 2 tbsp honey
- 1 tsp salt
- 1/2 tsp fresh cracked black peper
Instructions
- Combine ingredients together and toss with dressing.
- To make ahead - mix together the leafy greens and add the toppings in sections across the top. Reserve the dressing on the side until ready to serve and then toss everything together.
