Ingredients
  

Salad

  • 5 oz baby arugula
  • 1/2 head radicchio Sliced
  • 1 pint cherry tomatoes
  • 1/2 container strawberries Sliced
  • 1 container marcona almonds OR 1/2 cup of salted roasted pistachios
  • 1 block goat or feta cheese I used 5-6 oz of Kourellas
  • 1 avocado sliced

Dessing

  • 1/4 cup lemon juice
  • 1 tbsp zest from large lemon
  • 1/3 cup olive oil
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp fresh cracked black peper

Instructions
 

  • Combine ingredients together and toss with dressing.
  • To make ahead - mix together the leafy greens and add the toppings in sections across the top. Reserve the dressing on the side until ready to serve and then toss everything together.
