Mint Lime Matcha Chia Pudding
If you have been here for a while, you know we LOVE talking about the benefits of blood sugar stability for hormone health. To set myself up for success, I love batch prepping a chia pudding for the week as an option for breakfast, snack, or bump up to a meal! Rich in healthy fats, fiber, and nutrient dense flavor boots - this chia pudding is a great addition to a blood sugar balanced day.

- 1 cup full fat coconut milk
- 1 cup almond milk
- 1 juice of a small lime
- 1 zest of a small lime
- 2 tbsp maple syrup
- 1.5 tsp Piquelife tea matcha
- 1/4 cup fresh mint leaves
- 2 tsp vanilla extract
- 1/2 cup chia seeds
Whisk all ingredients together in one bowl
Chill over night in the refrigerator
Serve with blackberries, extra matcha, and sliced almonds or pumpkin seeds for an added crunch!
