Mint Lime Matcha Chia Pudding

If you have been here for a while, you know we LOVE talking about the benefits of blood sugar stability for hormone health. To set myself up for success, I love batch prepping a chia pudding for the week as an option for breakfast, snack, or bump up to a meal! Rich in healthy fats, fiber, and nutrient dense flavor boots - this chia pudding is a great addition to a blood sugar balanced day.

Ingredients
  

  • 1 cup full fat coconut milk
  • 1 cup almond milk
  • 1 juice of a small lime
  • 1 zest of a small lime
  • 2 tbsp maple syrup
  • 1.5 tsp Piquelife tea matcha
  • 1/4 cup fresh mint leaves
  • 2 tsp vanilla extract
  • 1/2 cup chia seeds

Instructions
 

  • Whisk all ingredients together in one bowl
  • Chill over night in the refrigerator
  • Serve with blackberries, extra matcha, and sliced almonds or pumpkin seeds for an added crunch!
